Grading and Quality

Once produced, Thomas Hoe Stevenson® cheese is left to mature and age to Perfection.

Each cheese is individually graded, and then hand selected to ensure the finest quality.

All our graders are highly trained cheese specialists who determine that every cheese produced meets exact prescribed standards of taste and texture.

Cheese is highly complex and the graders have many years of experience in determining the exact point at which a cheese is ready to leave the dairy.
