Aged Blue Stilton® & Port Soufflé

Serves 1

85g Aged Blue Stilton®
2 tbsp port
3 tbsp double cream
1 egg yolk
3 egg whites
1 tbsp lemon juice

1) Preheat the oven to 200ºC / Gas mark 6. Place the Aged Blue Stilton®, port and cream in a non-stick ovenproof frying pan. Heat gently until the cheese has melted and the mixture is smooth. Remove from the heat and stir in the egg yolk.

2) In a bowl, whisk the egg whites with the lemon juice until stiff peaks form when the whisk is removed. Fold the egg whites into the cheese mixture.

3) Transfer to a ramekin dish and bake in the oven for 6-8 minutes, or until well-risen and lightly golden on top.
