Seared Beef Salad with Aged Blue Shropshire Dressing

Serves 4

350g piece of beef fillet
4 tbsp olive oil
500g Aged Blue Shropshire cheese crumbled
150ml mustard vinaigrette
Mixed salad leaves
Salt and freshly ground black pepper

1) Halve the beef fillet lengthways and rub with 1 tablespoon of olive oil and season with salt and freshly ground black pepper. Heat a frying pan over a very high heat. When hot, add the beef pieces and cook uncovered for 2 minutes on each side for rare, or about 5 minutes on each side for medium-well done. Remove from the pan and leave to cool.

2) Whisk the crumbled Aged Blue Shropshire with the mustard vinaigrette in a small bowl. Cut the beef into 8 thick slices.

3) To serve, pile the salad leaves on the plate, arrange the beef on top and spoon over a little of the dressing.
